"In the villages around the lakes of the most alpine wine region of Greece the elderly still call the indigenous grape variety Popolka. Returning to the old tradition of home winemaking practices, Xinomavro is giving us a white autogenous wine, made without additives or interventions on the naturally occuring production processes, without any maceration ("pata-trava") and resting in the bottle for several months."
