Pearse 12 Year Founders Choice Single Malt Year Irish Whiskey from the Pearse Lyons Distillery at St James Place in Dublin.  

Founded in 2017 by Pearse Lyons before his death. This release is sourced. It’s from an undisclosed distillery, but by evaluating its flavors and who sells old whiskey in Ireland, I’d say its origins began at Cooley. Cooley owns two column stills, and the Pearse 12 has similar characteristics of a column still whiskey and not pot still whiskey. Those characteristics being a light-bodied whiskey with peach, jellied candy and more stone fruit, the whiskey still has mocha, clove and ginger notes to keep you warm.
